Mushroom Quinoa Rissoto

Italian cuisine is one of the most liked cuisines of every household and so is in my case. So, in the wake of this fact, I’m going to share a very special Italian recipe which is known as Rissoto, with a healthy twist added into it. 

Here, instead of rice, we will use quinoa which offers comparatively more dietary fibre and protein. Surprisingly, quinoa even beats brown rice when is comes to its mineral rich properties, especially Iron and Magnesium. Thus fighting the so called “Iron deficiency” in kids and women with this delightful main course dish.
Not only this, in vegetables, we will use one of the most prominent sources of iron, that is Mushroom along with onions or any veggies of your choice.

Preparation time- 20 minutes
Servings- 2

  • 3/4 cup rinsed quinoa
  • 1/2 cup chopped onion
  • 1-2 garlic cloves- finely chopped
  • 1 cup sliced mushrooms
  • 1 tablespoon olive oil
  • Salt to taste
  • 1/2 teaspoon red chilli powder
  • 1/2 teaspoon ground black pepper
  • Salt to taste
  • Lemon zest
  • 4-5 Coriander leaves

  • Add water in a pan and set it to boil on high flame.
  • Once the water boils, add quinoa and reduce flame to low.
  • Add salt and cover quinoa with lid for 10-15 minutes or until water get fully absorbed.
  • In a separate pan take olive oil and add onion to let it sauté until the color changes to pinkish brown.
  • Add garlic and mushrooms into the pan and stir well.
  • Now add the spices and salt and stir again.
  • Sauté until mushrooms become soft.
  • Mix this mixture into boiled quinoa and add lemon zest and coriander leaves on top for garnishing.
  • Your mushroom quinoa risotto is ready to serve. Enjoy!

View Outside My Window- Mundane but Warm


Mornings at home are the best mornings, since my mother always opens up the curtains of the window inside my room when the daylight shows up, and the sunlight from the window comes straight into the room to lighten it up with natural light. 
This window being right beside the bed, makes me prone to see the view outside the moment I wake up.

Since, we live at a government quarter in a small town, there’s a lot of greenery around our house to add up to the view outside the window.
I see the small gate outside which doesn’t really protect our house from any robbery because anyone can literally very easily jump off it so I always wonder what’s the use of locking it at night. I also see the fairy lights attached to the shed which have been there since the Diwali days and we’re too lazy to take them off.

And the next target to my eyes are the quarters in the front lane with their cars parked inside and closed gates. It’s 11 am in the morning and not a single person is visible outside. That’s really strange because winters are already here and no one seems interested to have a sunbath in the lightly warm sunlight except an ox who’s staring at me like I’ve done something wrong to him.

I think I should accompany him so I’ll take a chair and newspaper out in the veranda to intensify this stare game of ours until my mother comes with a hot cup of tea.

Europa, A Sci-Fi Thriller Review


Europa by Hywel Richard Pinto is one such book that doesn’t stick to a single genre but is a blend of drama, thrill, suspense, mystery and space opera for all the sci-fi lovers where the readers may find themselves juggling the stories of many different characters and aspects related to a single mission, Europa.
Europa is apparently a research, search and rescue mission in order to search and rescue the crew members of Silver Wind spaceship which had got disappeared in the past during its trip to Jupiter.

I strongly believe that the fictional characters and plot requires a lot of research in the chosen subject and space being one of the most vast subjects to explore, it is commendable that the author had very well researched on this topic. I being an avid space admirer, didn’t find a single place where I could question the space related concepts and illustrations depicted in the narrative. The story runs between the year 2250 and six years back, which is the past but logically even that’s the future for us. Lol! 

The protagonist, Richard Sparks who is an employee of a secretive business/organisation for space exploration named SEUSA gets chosen as the captain for this mission and later gets accused for being a partaker in the murder that transpired during their mission to Europa, the Jupiter’s moon. The story commences with the trials of Captain Sparks for the same but gradually unfolds the actual conspiracy behind the murder which is far beyond the walls of SEUSA and involves some high profile people with cruel intentions.

Wowsome facts:
  1. Every character is well depicted in terms of both physical appearance and temperament. 
  2. Chapter titles are very useful in the first few chapters to understand the plot as the story swings between present and past.
  3. Author has very cleverly unveiled the story and characters with every turning page.
  4. Space enthusiasts will love the ideology and practices followed when inside a spaceship and the whole secrecy policy that is followed till the end.
  5. Rubin Draco’s character will give you the classic villainous chills and rightly so his name does justice to his character.
  1. There are many editing errors such as typos, spacing errors, improper punctuation, paragraph repetitions, etc
  2. The story somehow did not keep me on my toes throughout but is definitely a suspenseful thriller.
  3. I wanted to see more of future related assumptions portrayed in the lines of the 2250 based narrative which I did not find much except the security measures of SEUSA and space research advancements.

Final Verdict:

I would rate it a 3.5/5, keeping aside the editing mistakes. I loved the casual language used in the excerpts that makes the reader familiarize with the intentions, gestures and personalities of the characters. 
Some characters will confuse you about their true sides which are revealed later which is a positive point and contributes in making it a page turner.
All in all it’s an entertaining piece and will keep your eyes interested and glued for the most part of it.

Shredded Broccoli Coleslaw Recipe

Honestly, my favourite part in every dish is the slaw or coleslaw, which goes along with almost everything be it burger, sandwich, chips, fries and what not!

Shredded broccoli coleslaw is a new revision of conventional coleslaw, where we will use shredded broccoli in place of cabbage. As broccoli is very good source of vitamins, fibre and minerals such as zinc, protein and iron. Also it has omega-3 fats which are the healthy fats. 
So, for all the health concerned people, broccoli is a great choice. Another great twist that I have added into this dish is that instead of mayonnaise, which is full of fats and calories, we’ll be using low fat curd. Thus, making a low calorie coleslaw for all the fitness conscious people.

See the below mentioned information to know how to prepare this extravagantly flavourful snack.

Servings- 1
Preparation time- 5 minutes


1 small head broccoli  - Shredded
2 small carrots - Shredded or sliced
1 small onion - Finely chopped
1 small capsicum - Finely chopped
1 tsp lemon juice
1 tsp vinegar
Salt to taste
1/2 tsp ground pepper
1 small cup low fat curd

  1. Add all the ingredients into a mixing bowl and stir the mixture thoroughly.
  2. Spread it over chips or use as a dip or simply have it as a salad and you’re good to go!

Aloo Methi Recipe in a Layman's Style

With advanced technologies and developments, the pace of our lives has reached a whole new level where nearly every thing can be done with a simple touch on brilliant electronic devices. But with this increased pace, what else has increased is the lack of attention towards our body and the carelessness in our eating habits.

A wholesome nutrition is certainly very essential for our body and an ideal diet must be balanced with all the sufficient minerals and vitamins. But are we actually having a balanced diet?
I think we all know the answer.

People like me who have a 9-5 job are in such a hurry that we grab almost anything that we find just to hush our starving stomachs. We’re never bothered about cooking ourselves some good nutritional food as we’re too lazy to do that.
Many friends of mine complain of having a series of health issues from having fatigue to headaches and stomach aches. These symptoms are caused due to the lack of nutrients in are diet, one of those which is evidently prominent is undoubtedly iron. Iron plays a very crucial role in proper growth and development of human body. Moreover, it helps in the production hemoglobin and red blood cells. So, it is a must to include good amounts of iron in our daily diet.

Lately, I have got really concerned about my health after hearing to symptoms of various illnesses that people are suffering in my surroundings. So I decided to improve my eating habits by making and opting a list of healthy options and by chucking out unhealthy options from my diet.

My mother has always pointed to me, a few things that are very healthy to eat like cinnamon, garlic, ginger, onion and methi which may not taste very good but they do complement other eatables and on the top of that have great health benefits.
Which reminds me that I am a great fan of aloo methi which is a dish prepared by potatoes and fenugreek leaves.
Fenugreek leaves are not only flavorsome but also have some amazing health benefiting characteristics. Especially being a great source of iron, it serves as a supplement when added to any dish.

So yesterday, I finally decided to cook one of my favorites, Aloo methi with all the above mentioned ingredients and that too in my very own layman's style!

Follow the steps and ingredients mentioned below to know how I prepared it.

Ingredients Used:
  • 1 small bowl chopped potato
  • 1/2 small bowl chopped onions
  • 1 small bowl methi
  • 1/2 tsp cinnamon powder
  • 2-3 cloves of garlic
  • 1/4 small sized grated ginger
  • Salt as per taste
  • 1/2 tsp pepper
  • 1 tsp turmeric powder
  • 1 tsp olive oil

Steps that I followed while cooking this savoury dish:
  1. Pluck out a bunch of fenugreek leaves into the bowl and wash is properly.
  2. Put the leaves into an empty pan for sauté and cover it with lid for 10 minutes.
  3. Now in a separate pan add a tsp full of Olive oil and after oil gets heated add ginger, garlic and cinnamon into it.
  4. Add chopped potatoes and onions along with the mixture prepared above into the sautéed leaves and stir well.
  5. Add salt, pepper and turmeric powder into the pan and cover with lid for another 15 minutes on slow flame after stirring properly.
  6. Turn off the flame and serve it hot with chapatis and curd and you’re good to go

One of the greatly known iron rich foods is the whole grain brown rice, which is far healthier than white rice and tastes equally good. Being a food lover, I have always significantly been a fan of vegetable pulao. But nutrition level of white rice isn’t very much appreciated, so I always had to control my cravings for pulao until I tried my customized vegetable pulao recipe made with none other than brown rice. 


1. Main ingredients:
  • 3/4 glass brown rice 
  • 2 small sized carrots (chopped)
  • 1 small bowl peas
  • 2  medium sized onions (chopped)
  • 1 tsp olive oil
  • 2 glasses of water (Nearly 2.5 times brown rice)
2. Spices:
  • 1 tsp jeera (Cumin seeds)
  • 1/2 tsp cinnamon powder
  • 1/2 tsp Dhaniya Powder
  • 2 green chilies (chopped)
  • 1/4 tsp Red chili powder
  • 1/4 tsp Black pepper powder
  • Salt to taste
3. For Garnishing: 
  • 1 small bowl grated paneer
  • Fresh coriander leaves (10-15)

  • Soak the brown rice in water for one hour
  • Take a pressure cooker and put 1 tsp of oil into it.
  • After few minutes when oil gets heated up, put cumin seeds, green chilies and cinnamon powder into it and sauté for 3-4 minutes.
  • Now, add chopped onions and let it cook for 5 minutes.
  • Add salt and spices into the cooker.
  • Now add carrots and peas and mix well.
  • Add 2 glasses of water into it and wait for the water to boil.
  • Add brown rice into the cooker and close the lid tightly.
  • Cook until two whistles are released on high flame and then turn off the burner and keep in steam for another 5-6 minutes
  • Garnish the bowl of pulao with grated paneer and coriander leaves.
  • Serve hot pulao with curd or coconut chutney.

Here’s the recipe of healthy Oats Idli, and why is it healthy?
It’s because the hero of this recipe is as the name suggests, Oats. Oats are incredibly nutritious and iron rich too. A cup of oats contains 20% of daily recommended dietary allowance for Iron. Can you believe it?
This recipe also involves the benefits of peas and French beans which are also rich in minerals such as zinc, protein, magnesium and iron. Again an iron booster goodness.

A blend of taste and health
Enjoy this great recipe with goodness of iron enriched into it.

Main Ingredients:
  • 1 Large bowl of Oats
  • 1 Small bowl of Rawa/Suji ( Half times oats)
  • 1 Small bowl of curd
  • 1 Small bowl of chopped French beans
  • 1 Small bowl of peas

Basic Ingredients:
  • Salt as per taste
  • 1/2 tsp Red Chili Powder
  • 1/2 tsp Black Pepper Powder
  • 1 tsp of any vegetable oil
  • A glass of water

Magic Ingredients:
  • 1/2 tsp Baking Powder
  • A pinch of Eno1/2 tsp Mustard Seeds
  • 1/4 tsp Cinnamon
  • 5-6 Curry leaves
  • Few grated ginger


1. Batter:
  • Grind the bowl of oats to make it in powdered form.
  • Take an empty bowl and put ground oats, curd and rawa into it.
  • Add a pinch of salt and pepper into it.
  • Mix everything well while gradually adding small quantities of water into it until the consistency of batter becomes smooth but sufficiently thick.
  • Cover the batter and set it to settle for 10-15 minutes.

2. Veggies:
  • Put a tsp of olive oil into a pan.
  • Add mustard seeds, grated ginger, curry leaves and cinnamon into the pan and sauté it for 2-3 minutes
  • Now, add peas and French beans and roast them for 5-10 minutes after adding remaining salt and spices.

3. Idli Preparation:
  • Add the veggies into the batter and mix them well.
  • Add a tsp of baking powder and a pinch of Eno into the batter.
  • Take the Idli stand and grease the base of Idli plates with oil.
  • Pour the batter into the Idli plates.
  • Add a cup of water into the steamer such that water should not touch the base of Idli stand.
  • Put the I dli stand into the steamer and cover the steamer with lid.
  • Keep the flame of stove to low level and let it cook for 8-10 minutes.
  • Serve it hot with tomato ketchup or mint sauce.

Five Experiences Of Every Small Towner

I don't know about you but I am very certain about the fact that one's personality is strongly based on their hometown, the place where they're born and brought up. If you belong to a small town (like I do), you'd definitely relate to undermentioned incidents. (Even if you don't, nodding along would be appreciated. Thank You!)

View outside my home- Just to create the feel of a Small town 

1. Freaked out with excitement on visiting shopping malls for first time.
I still remember the time when I visited Chandigarh for the first time, that was about 10 years ago or so. And it had only one shopping mall running at that time. I was totally awestruck on visiting that mall for the first time. Taking escalators, eating at Mc Donalds, buying gummy candies, watching movie in a multiplex cinema and playing claw machine games and air hockey were like the first timers for me who had only visited street shops or shopping marts until then. It was like an uber paradise for me, I felt like I'm living a dream. Few hours weren't enough for me to explore the entire place and I acted like a total maniac while constantly chanting "Oh My God! Oh My God!" to be very honest.

2. Took time to digest that it is OK for anyone to smoke a cigarette, go on a night out, openly discuss about their periods or be in a love or live in relationship as long as it is solely their choice.
C'mon, don't judge me. I had always been taught since my childhood that all of these things were sinful, these were just supposed to be shown in the movies and weren't practiced by a common man like us which indeed wasn't quite the truth. It was when I got exposed to the people of a progressive city, that I realized that everyone has a right to do whatever they want to and that does not define them or make any statement about their personality. I gradually realized that no one is worthy of judging anyone else other than theirselves. 

3. Faced lack of opportunities
I know many people will not agree with this saying that talent and hardwork always pays, which is true but another true fact is that it requires much more patience and efforts for a small towner to rise than the one living in a metro city. Standards of living, surroundings, opportunities, unconventional thinking, acceptance and appreciation of extraordinary skills, all these things depend on the place where you live. For eg, If you want to get professionally trained in western music, you can not do that while staying in a place like, say Patiala(No offense). You have to go to a place like Delhi, Bangalore or Mumbai to get a professional training for such skills. I think it's very important to remove these drawbacks from small cities by introducing or bringing such opportunities in these cities as well. Because I would never want anyone to miss their chances of becoming successful because of the shortcomings of their hometown.

4. Felt leftout in a room of high maintenance people
I guess all the Punjabis will empathize with me on this. We're prone to eat recklessly without giving any damn to the "unhealthy" consequences, but apparently people in the advanced cities are very much conscious about their health. I had never heard of gluten-free diet or keto diet or perhaps any kind of diet before I came to Chandigarh. I thought eating roti(Indian Bread) is the healthiest habit of mine, which indeed has lots of carbs and gluten and isn't much preferred here by many high toned people. Foods like brown rice, broccoli, quinoa, flax seeds, chia seeds were like invisible for me few years back when I lived at home and presently I am actually relying on them for my health(in the wake of living in an advanced city). Only I know how much I crave for that "roti sbji" that my mother cooks back at home.

5. Tried to immitate sophisticated living but failed.
Once again, don't judge. But as a small towner, you always have an inferiority complex when you visit a new place with people having a modern lifestyle so as a defensive move you always try to adopt their lifestyles to fit into their group. I have also many a times tried living a sophisticated life, here in Chandigarh. By switching from "Sony Xperia" to "Apple", from "Lux" to "Park Avenue", from "Laughing out loudest" to "Just Smiling", from "Being a potato" to "Going to gym", from.. Ahh.. but I couldn't because.. mai hu aadat se majboor. :D

New Stomach Old Brain Review

Everyone in this world is struggling with their own set of challenges be it having issues with career or family or health. There was a time when I was having issues with my weight few years back when I had drastically put on a lot of weight because of my careless binge eating habits. On account of which I tried a bunch of ways to lose weight from starving to workouts. 
I had recently read a book by Limor Haim Matityahoo called "New Stomach Old Brain" which reveals a different aspect and story of the author who had always had weight issues and how she dealt with it before and after her weight loss surgery. 

What I loved about the book is its simple and straight forward language, there are very few or perhaps no jargon (technical terms) that may be difficult to understand. A straight from the heart language has been used to portray the experiences of author's life.

Foodie's Choice
Every foodie can totally relate to the habits of the author, how she loved every kind of food and couldn't resist finishing her plate. Being a food lover myself, I could utterly empathize with the words written in the book. This book is for every person with a significantly good appetite who has been struggling from their weight all their lives. And is especially for those who are considering to undergo a weight loss surgery or have gone through the same. 

It empowers the self esteem of obese people and emphasizes on the reasons why people are prone to eat more than they actually require. It idealizes the idea of not following the myths or presumed practices that are imposed on you since childhood and encourages the readers to always listen to their heart. It also lays stress on the repercussions of excessive dieting and an alternative "non-diet approach" which is by the way a great way to stay healthy and fit. 

One thing that is evident about this book is that it only shows author's single minded perception about weight loss and someone with a different or conflicting approach may not follow what author believes.

I would recommend reading this book to everyone who is planning to go through any such surgery and to those who understand the habit of binge eating and can relate with this. This would definitely make you more confident within your skin and would help you make right decisions that suits your body.
