Italian cuisine is one of the most liked cuisines of every household and so is in my case. So, in the wake of this fact, I’m going to share a very special Italian recipe which is known as Rissoto, with a healthy twist added into it.
Here, instead of rice, we will use quinoa which offers comparatively more dietary fibre and protein. Surprisingly, quinoa even beats brown rice when is comes to its mineral rich properties, especially Iron and Magnesium. Thus fighting the so called “Iron deficiency” in kids and women with this delightful main course dish.
Not only this, in vegetables, we will use one of the most prominent sources of iron, that is Mushroom along with onions or any veggies of your choice.

INGREDIENTS
- 3/4 cup rinsed quinoa
- 1/2 cup chopped onion
- 1-2 garlic cloves- finely chopped
- 1 cup sliced mushrooms
- 1 tablespoon olive oil
- Salt to taste
- 1/2 teaspoon red chilli powder
- 1/2 teaspoon ground black pepper
- Salt to taste
- Lemon zest
- 4-5 Coriander leaves
PREPARATION
- Add water in a pan and set it to boil on high flame.
- Once the water boils, add quinoa and reduce flame to low.
- Add salt and cover quinoa with lid for 10-15 minutes or until water get fully absorbed.
- In a separate pan take olive oil and add onion to let it sauté until the color changes to pinkish brown.
- Add garlic and mushrooms into the pan and stir well.
- Now add the spices and salt and stir again.
- Sauté until mushrooms become soft.
- Mix this mixture into boiled quinoa and add lemon zest and coriander leaves on top for garnishing.
- Your mushroom quinoa risotto is ready to serve. Enjoy!
